Enjoy this amazing banana bread recipe! Great way to use up ripe bananas!
What to do!:
Pre heat conventional oven to 180 degrees.
Grease loaf tin with butter and line at least base with baking paper.
Mash bananas with a fork, add honey and sugar and stir in. Then add egg and vanilla essence and stir in. Then sift in self raising flour, cinnamon and salt. Stir in until just combined (using whisk helps).
Pour into loaf tin and bake for 30 minutes (check with skewer if it comes out clean or just a few moist crumbs on it). Sometimes need to cook extra 8 - 10 minutes at 150 degrees.
Let cool for 10 minutes.
PS: Variations - if you want it to be more moist add an extra banana or 2 tablespoons melted and cooled butter. Can add 1/2 cup choc chips, poppy seeds or chopped dates too!
Variations - to make cupcakes, bake for 13 minutes. :)
